The smoke point is not an absolute threshold beyond which quality collapses irreversibly. When buying olive oil for cooking, choosing a product that states its acidity and polyphenol levels is a practical way to gauge smoke point indirectly. Products that carry a harvest year and bottling date make it easier to assess freshness, which also affects heat performance. Once opened, store the bottle away from direct light in a cool place, and aim to use it within two to three months — a step that can help preserve both the flavour and the characteristics that make a high-quality EVOO worth cooking with.
