PDO, PGI, DOP, EVOO: Every Abbreviation on Your Olive Oil Label, Decoded
Olive oil bottles are crowded with acronyms — EVOO, PDO, DOP, PGI, IGP — drawn from different languages and regulatory bodies. Understanding what each mark actually certifies makes it far easier to choose well.

So Many Acronyms — Where Do They All Come From?
Pick up an olive oil bottle in a supermarket or online shop and the label can feel like an alphabet test: EVOO, PDO, DOP, PGI, IGP… The abbreviations come from different languages and different regulatory bodies, but they resolve into a handful of core concepts. Once you see the structure, the choices become much clearer.
The key is to recognise that label acronyms fall into two independent layers: those that describe quality grade (the EVOO family) and those that describe geographical certification (the PDO and PGI family). Because the two layers are independent, both can appear on the same bottle at the same time.
EVOO: The Top of the Quality Ladder
EVOO stands for Extra Virgin Olive Oil — the highest tier in the olive oil grading system. According to the International Olive Council (IOC) standard, an oil may only carry this designation if its free fatty acid content (acidity, expressed as oleic acid) is no greater than 0.8 g per 100 g, its peroxide value is at or below 20 meq O₂/kg, and no sensory defects are detectable in a trained-panel evaluation. The IOC olive oil trade standard specifies that all three conditions must be met simultaneously.
Lower acidity is generally understood to reflect freshness and careful processing. While 0.8% is the legal ceiling for EVOO, many high-quality producers aim for 0.2–0.3% or below. Below EVOO, the grades descend through Virgin Olive Oil (acidity up to 2%), Ordinary Virgin Olive Oil (up to 3.3%), and Lampante — a crude oil intended for industrial refining, not direct consumption.

PDO vs. DOP vs. AOP: One Concept, Many Languages
Geographical certification is a separate matter from grade. PDO stands for Protected Designation of Origin, the strictest tier in the EU's geographical indication system. For an olive oil to carry a PDO, the entire production chain — cultivation of the olives, milling, and packaging — must take place within the defined geographical area.
The same certification goes by different names depending on the country of production. In Italy it is DOP (Denominazione di Origine Protetta); in Spain, also DOP (Denominación de Origen Protegida); in France, AOP (Appellation d'Origine Protégée); and in Greece, ΠΟΠ (Προστατευόμενη Ονομασία Προέλευσης). The language differs; the legal meaning does not. Under EU labelling rules, all of these marks are legally equivalent to PDO. According to data from the European Commission's Directorate-General for Agriculture and Rural Development, more than 140 olive oil PDO designations were registered in the EU as of 2024.
PGI — Protected Geographical Indication (Italian: IGP, Indicazione Geografica Protetta) — is one step more flexible. It requires that at least one stage of production, processing, or packaging takes place within the designated area. An oil whose olives are grown in a specified region but milled and bottled elsewhere can still qualify for PGI. For that reason, PDO is generally considered to offer a stronger guarantee of regional specificity than PGI.
TSG and EU Organic: The Other Marks You May Encounter
TSG stands for Traditional Speciality Guaranteed. Unlike PDO and PGI, it protects a traditional production method rather than a geographical origin. TSG is rare in olive oil, but some producers who maintain specific traditional pressing techniques do apply for the designation.
The EU Organic logo — a green leaf formed by stars — indicates that the oil meets European organic farming standards: restricted pesticide and herbicide use, no synthetic fertilisers, and related requirements. This certification runs entirely independently of quality grade and geographical status. A label reading 'Organic EVOO PDO' is therefore not unusual: it simply means the product has satisfied all three systems at once.

A Practical Order for Reading Any Label
The following sequence gives a reliable framework for evaluating a bottle before you buy.
First, confirm the grade. Look for 'Extra Virgin' or 'EVOO'. Without it, the oil sits at a lower quality tier. That said, the designation alone is not a complete guarantee: the Codex Alimentarius Commission has reported instances in certain markets where oils labelled EVOO have been distributed without adequate verification of grade standards.
Second, find the harvest date or mill date. Olive oil does not improve with age the way wine does. The milling date is a far more meaningful freshness indicator than the bottling date.
Third, check for PDO or PGI status — and note which region the certification covers. Knowing the origin can help predict the cultivar and the flavour profile typical of that area.
Fourth, look for voluntary acidity and polyphenol figures. EU regulations do not require producers to print these numbers, but those confident in their product tend to do so. Higher polyphenol content is associated with greater antioxidant richness; according to a European Food Safety Authority (EFSA) opinion, olive oil polyphenols have been reported to contribute to reducing the oxidative stress of LDL cholesterol, though it is too early to draw firm conclusions about broader health outcomes.
Certification Is the Starting Line — Taste Is the Finish
A PDO or PGI mark is not an unconditional guarantee of quality. These certifications are administrative tools: they verify process transparency and regional specificity. Within a single PDO, the producer's skill and the timing of the harvest can still produce wide variation in flavour and polyphenol content from one season to the next.
Reading labels fluently raises the floor of your selection — it gets you into a better pool of candidates. What completes the process is tasting: comparing oils from different certified regions side by side remains the most direct way to develop real judgement about what you like and what you're paying for.
