Understanding How the Price Mechanism Works

Extra virgin olive oil (EVOO) is more volatile in price than almost any other culinary oil. The 2014–2015 season stands as one of the largest Spanish olive harvests in recorded history. IOC production statistics show Spanish output reached approximately 1.7 million tonnes that season — more than double the previous year's figure. Reading the Market Ahead

As long as climate change continues on its current trajectory, structural volatility in olive oil prices is likely to remain elevated. A report from the World Meteorological Organization (WMO) documents that the Mediterranean region is warming faster than the global average while precipitation declines — conditions that make olive cultivation progressively harder in traditional growing areas. That pressure suggests producing countries such as Morocco, Portugal, and Chile will carry a growing share of global supply over the long term.

At the same time, investment in varietal diversity and water-efficient farming methods is increasing. Some producers are hedging climate risk by cultivating multiple varieties on the same estate. The price cycles will repeat, but within them the gap between producers who maintain quality and transparency and those who do not is likely to become more visible with each swing.
