The Harvest Is Where Quality Begins

The quality of an extra virgin olive oil (EVOO) is not decided in front of the press — it is decided in front of the tree. The moment an olive is separated from the branch, oxidation begins, and how fast it progresses depends largely on how much physical damage the fruit has suffered. Harvest method is therefore the first variable that determines acidity, polyphenol content, and flavor profile.

Three main approaches are in use across the world's olive-growing regions today: hand picking, in which fruit is removed one by one; raking (or combing), in which a rake-like tool sweeps olives from the branches; and mechanical harvesting with a shaker, which uses machine-generated vibration to drop fruit all at once. Each method differs not only in scale, cost, and speed, but in what it delivers to the mill.

Hand Picking — Slow, but the Fruit Arrives Intact

In hand picking, the harvester holds a branch with one hand and detaches olives individually with the other, or gently combs them onto nets spread below. The impact on each fruit is minimal, so olive flesh cells remain largely undamaged — and phenolic compounds such as oleocanthal and oleacein reach the press intact.

According to quality guidelines published by the International Olive Council (IOC), bruising of olive flesh during harvest is among the primary causes of accelerated fatty-acid breakdown, which pushes free acidity upward. The drawbacks are straightforward. Labor costs are high and throughput is low, which makes full adoption impractical on large estates. It remains the preferred choice of small traditional groves in Spain and Italy and of boutique producers focused on single-cultivar EVOO.

Raking — A Workable Middle Ground

Raking uses wide plastic rakes or motorized vibrating combs to sweep olives off branches and onto collection nets below. It is considerably faster than pure hand picking and places less physical stress on the tree than a trunk shaker — an important consideration for old, heritage-variety trees that cannot tolerate intense mechanical vibration. Small-to-medium farms account for the majority of operations that rely on this method.

In quality terms, raking sits between hand picking and full mechanical harvesting. Some fruit will pick up surface abrasions as it falls, creating entry points for oxidation. However, research groups affiliated with Spain's National Research Council (CSIC) have reported that rapid cold storage and milling within 24 hours of raking can substantially reduce this effect, allowing olives collected by comb to retain high polyphenol levels.

The critical variable is time on the net. Regardless of method, the longer harvested olives pile up — especially in warm conditions — the faster quality declines.

Mechanical Shakers — Economies of Scale, with Quality Trade-offs

A mechanical shaker clamps onto the trunk or a major limb and applies intense vibration, dropping the entire crop of a tree at once. Large machines can process dozens of trees per hour, making them indispensable on modern super-high-density orchards that stretch across thousands of hectares.

The efficiency gains are real, but so is the quality management challenge. Intense vibration causes widespread bruising, and once the fruit hits the ground or collection net, it is compressed under the weight of the olives above it. Harvest Timing Matters as Much as Harvest Method

One variable that comparisons of harvest method often overlook is harvest timing. Olives ripen progressively from green through violet to black, and fruit picked early — while still green to half-green — carries significantly higher polyphenol concentrations along with the complex flavors of green apple, fresh herbs, and black pepper. No single factor determines what ends up in the bottle. Harvest method, harvest timing, transport time, milling temperature, and storage conditions all interlock. But the journey always begins at the same place — the moment a hand or a machine first touches the fruit on the tree.
